Often called "The Sham", Alto-Shaam Cook and Hold ovens utilize exclusive Halo Heat® technology, which surrounds the oven cavity with soft, gentle, halo of heat.
This heating environment traps meat's natural moisture, significantly reducing meat shrinkage plus the enzyme action generated accelerates the "aging" process, and so providing tender meat even from freshly killed animals.
The simplified cooking technology created easily portable 13amp cook & hold ovens which use very little electricity (less than £1 per 24 hours per cavity), and no hood ventilation is required thus making overall operating costs very low.
